On Thursday 27th November, we’re throwing open the doors in St. Albans for one of our favourite nights of the year. A full-blown feast, plenty of turkey, and the kind of atmosphere that feels like your mate’s dinner party – if they happened to own a smoker the size of a small car.

Because at Craft & Cleaver, we don’t need much of an excuse to gather the crew, pour something cold, and get the fire going. Thanksgiving just gives us a good one.

A Proper Feast

We’ve taken the best bits of the American tradition – good company, great food, a few ‘save room for dessert’ warnings – and given it a Craft & Cleaver twist.

You’ll kick off with appetisers to share, because Thanksgiving is all about enjoying things family style.

We’re talking whipped ricotta with roasted pumpkin and chipotle pecan pesto. Bacon-wrapped dates glazed in maple and kissed with smoke, sweet potato arancini with bar-b-que mayo, then cheese and jalapeño cornbread bites with honey butter. Basically, all the good stuff that makes you say, ‘you think we’ve ordered a bit too much?’

Then comes the real deal: the Thanksgiving feast, served family-style down the table, the way it should be. Sweet tea-brined smoked turkey breast, slow-cooked over cherry, maple, and hickory wood until it’s tender enough to fall apart at a glance. Twelve-hour smoked brisket, rich, juicy, and smoky in all the right places.

And because a feast is nothing without the sides, we’re loading the table with tallow-roasted potatoes, brussel sprouts, glazed carrots, peach and rosemary stuffing, plus bottomless fire pit gravy. Yeah, bottomless. We know what’s up.

We’re finishing strong with brown butter pecan pie and caramel honeycomb ice cream – the kind of dessert that makes everyone go quiet for a minute.
